Using metal knives causes lettuce to bruise and brown or can even cause rust, as many types of lettuce are mostly comprised of water. To prepare lettuce in advance for several servings of salad (you are more likely to eat it if it's already torn up and ready - and this option is much less expensive than the bagged mixes) tear or cut lettuce into bite-sized pieces. Place in container with seal or large gallon sized zip seal bag - add a paper towel in with the lettuce before sealing.
